Ingredients

It's necessary:
200 g flour (type 400, soft)
2 eggs
1 dl of oil
3 dl of milk and some lukewarm water
teaspoon salt and sugar

Preparation

1 Take a deeper plastic bowl and pour the flour into it, add the eggs and about 2 dl of milk. Try to whisk and if it doesn't go add some more milk.

2 Tip: You can make dough only with water or only with milk. It is best when you put in half mineral water and half milk.

3 It is important that the dough is thick and whisked until smooth, with no lumps, then add more milk and some acidic water, and until you have a dough that looks like a broth. Add about 1 dl of oil to the dough and mix well.

4 Tip: The dough will be better if you let it stand for 20-30 minutes.

5 Pour the oil into the pan and, when it is warm, deliver the oil so that the pan is only greasy. Put it back on the ring and then roll it with a dough ball, which should be evenly distributed over the pan. The temperature at which the pancakes are baked must be high. Leave it on the ring for a few moments, then flip it over with a knife or throw it up.

6 Tip: Use only Teflon pans, as this will prevent your pancakes from sticking to the bottom. you won't have to "grease" the pan all the time.

7 As soon as one side of the pancake is baked, turn it to the other side and bake as much as the first (about 1 minute). Roll the finished pancakes onto a shallow plate and fill.
